Dried anchovies come in three different sizes, and are sold in plastic packs, which are usually kept in the freezer section. In this book we only use the large and small size. The large anchovies (marked ‘c’ in the photo) are used to flavour soup stocks and stews, which are very quick to make, unlike Western stocks. The very small anchovies (marked ‘d’) are fried and seasoned and eaten as the most delicious crispy side dish, and a great source of calcium too. Keep them stored in your freezer where they will keep for months, if not years, on end.
