Naeng-myeon noodles - 냉면

Rice, Noodles and Rice Cakes

These long and thin noodles are made from the flour and starch of various ingredients including buckwheat and sweet potato. They are exclusively used for the dish of the same name meaning ‘cold noodles’, (see pg??). They can be found in Korean markets, but regular buckwheat noodles, most commonly sold as ‘soba’, (see below), can also be used.
