Korean pears are large and round, very juicy and with a crispy texture that is lovely in salads or to add a little sweetness, like in the ‘sesame and soy beef tartrate’ recipe. They are commonly used to tenderize meat, as in the ‘bulgogi’ recipe. They are about twice the size of a regular western pear, so if you do substitute you will need approximately two Western pears for every one Korean pear.
