Kimbap (Korean sushi) is always made with a long strip of yellow pickled radish, and ‘black bean noodles’ is also always served with it. It has a very distinctive slightly sweet/sour taste that takes us back to Korea with the first taste. It is not absolutely essential to use it with these recipes, but it keeps well so we buy it and keep it refrigerated until we need to use it again, which could be months later.
