Korean buckwheat noodles are much the same as Japanese soba, a thin noodle, which can be made entirely from buckwheat flour, or more commonly mixed with varying quantities of wheat flour. Despite the name buckwheat is wheat and gluten free. They can also be used in the ‘chilled buckwheat noodle’ dishes.
